This microlot comes from Faber Pacheco in Cauca, Colombia--a producer shaped by generational knowledge and a continued commitment to refining both cultivation and processing. Coffee has been part of his family for generations, and that continuity is reflected in the discipline and clarity of his work today.
Over the past decade, Faber and his family have focused on improving quality through careful varietal selection and evolving processing techniques. Their approach balances tradition with experimentation, resulting in coffees that are both expressive and controlled in the cup.
Colombia
The Colombia variety is valued for its resilience and adaptability, while still offering the potential for sweetness and structure when grown at elevation. In Cauca’s climate, it can produce cups that are vibrant, fruit-forward, and well-defined.

Thermal Shock Washed

The Cup
The cup opens with blood orange and tangerine, carrying a vivid citrus structure. As it develops, honeyed sweetness emerges alongside a distinct juniper note, adding a subtle herbal complexity. The finish is clean and structured, with a bright, lingering clarity.

The Citrine reflects the character of the cup--bright, luminous, and structured around citrus and sweetness. Like the stone, it carries both warmth and clarity, revealing its full expression gradually.

The artwork on this bag was designed by our in-house designer, Rachel. Inspired by Byzantine Christian motifs with a modern approach, it reflects the clarity, brightness, and structured nature of this offering.

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
