Three Years of Lore Coffee Roasters: A Return to the Beginning

Founded in Bonners Ferry, Idaho, in 2022 by Graysen Spiller and his wife Rachel, Lore Roasters began with a simple conviction: coffee is worthy of reverence.

Inspired by the beauty found in the world around us, we set out to create a company that reflected the same care, intention, and craftsmanship through coffee. Our purpose is to explore the history, traditions, and scarce varieties that have shaped coffee for generations, bringing the ancient world to the present through every release.

From sourcing exceptional coffees to roasting and presenting them with purpose, Lore exists to preserve the stories behind each origin while sharing them with a new generation of coffee drinkers.

What started as a small roastery has, over the past three years, grown into a fully operational specialty coffee roastery and coffee house, built on a commitment to exceptional coffee, thoughtful craftsmanship, and genuine hospitality. From the very beginning, our mission has been to honor the extraordinary work of coffee producers by sourcing remarkable coffees, roasting them with precision, and inviting others to experience the stories behind every cup.

Over the last three years, we've tasted thousands of coffees, built relationships with producers across the world, expanded our collections, and continued refining every aspect of our craft. From dependable everyday coffees to rare, limited releases, every coffee we've shared reflects the same pursuit of excellence that inspired our very first roast.

This year has been one of our most exciting yet. We've released over 16 new coffees, and we're not slowing down. This week alone, we've launched two new coffees, with more exceptional releases still to come. If you love discovering remarkable coffees, now is the time to pay attention.

Our first single origin coffees we ever released came from Julio César Madrid at La Riviera Estate in Colombia's Risaralda region. That coffee became an early benchmark for Lore and began a relationship that continues today. Check out the archive.

To commemorate our anniversary, Julio produced a custom blend exclusively for Lore Coffee Roasters. Rather than offering a standard harvest, he created a coffee inspired by the original La Riviera release that introduced us to his work.

La Riviera Estate is located within Colombia's Coffee Axis, a region recognized for producing some of the country's finest coffees. Julio's attention to cultivation and processing has established him as one of the respected producers in the region, and we're grateful to continue sharing his work. Get yours here.

Looking Ahead

Our work is far from finished.

We're committed to continuing the search for exceptional coffees from around the world, from everyday favorites to some of the rarest and most historically significant varietals still in cultivation. Every release is selected with intention, whether it tells the story of a producing region, preserves a remarkable cultivar, or highlights the work of an outstanding producer.

This year alone, we've released more than sixteen new coffees, with many more still to come. As Lore continues to grow, our focus remains the same: quality over everything. Every coffee must earn its place through blind evaluation, careful sourcing, and roasting that allows its origin to speak for itself.

Coffee carries centuries of history, shaped by the people, places, and traditions behind every harvest. Through each release, we hope to share not only exceptional coffee, but also the stories that make each origin and varietal worth remembering.
