We recently spent some time at with our friends at Bird & Billy in downtown Kalispell, Montana for a bar takeover, and it turned into one of those days that reminded us why we love coffee so much.
Bird & Billy is a family-owned café and micro roastery run by the Nuila family, and you can feel that as soon as you walk in. Officially opened in 2025, they roast their own coffees, keep a solid rotation of single origins, and offer a bit of everything—specialty bread, pastries, tea, chocolate, and beverages. The space is beautiful and inviting, and we honestly wish we lived closer so we could spend more time there.
While there, we set up a cupping on their slow bar with both their coffees and ours. What’s really interesting about coffee is how much there is to explore, every farm and roaster approaches things differently, and those choices show up clearly in the cup. We also cupped an absence amount of coffee and one time, there was just so much to try!
Tasting everything side by side makes it easier to notice those differences in a practical way, whether it’s process, origin, or roast style. It also opens up a lot of conversation around what we’re each trying to highlight in the coffee and why.
It was a simple setup, but it's always valuable to slow down, compare, and learn from each other in real time. This is why we love getting together with other roasters and coffee enthusiasts!
