How you brew the coffee is just as important as how we roast it

We believe using a scale to weigh the coffee and water used while brewing produces the best tasting results. We recommend using 15-16g of water for every 1g of coffee. With a 1:16 coffee to water ratio, 15g of coffee and 240g of water produces an 8oz cup of coffee. Use this is a template for all of brewing methods, excluding espresso, which requires a much stronger 1:2 coffee to water ratio.

Dose and distribute carefully using a scale capable of reading to an accuracy of 0.1g.


Pour Over Filter Brewing

Dose: 15g
Water: 240g at 203 Fahrenheit
Grind size: Medium Fine
Brew time: 2:30-3:00
Target TDS: 1.25 - 1.35

Begin your brew with an initial 120g pour. Use your first 60g of the pour to saturate the coffee bed evenly whilst implementing a circular pouring technique.
Continue your pour by completing the final 60g pour into the center of the coffee bed. Replicate this pouring format once again, commencing your second pour at 35 seconds. Finish the brew with a total brew time in 2:30-3:00 minutes.

Auto-drip Filter Brewing

The automatic version of filter brewing. We recommend using the same coffee:water ratio (1:16) as a manually brewed pour over. Weigh your coffee and grind the coffee at a medium fine level. Then dose the coffee in an appropriate filter and place it in the coffee maker. Now weigh the water appropriately and pour it into the coffee maker's water basin. Hit the brew button and wait for the coffee to brew. If you prefer a stronger taste try brewing with a 1:15 coffee:water ratio or grind the coffee more finely.

Dose (in): 18g
Dose (out): 36g
Grind Setting: Please adjust your grind settings as necessary and use the recommended brew time as a reference
Brew Time: 29-33s
Target TDS: 6.5 - 8


French Press 10oz cup recipe

Ratio 1:14

Dose: 24g
Water: 340g at 203 Fahrenheit
Grind size: Coarse
Brew time: 5:30-6:00


Because French Press is an immersion brew method we recommend a stronger coffee to water ratio and longer brew time for best results. Begin your brew by pouring 340g of water directly into the coffee bed. Briefly stir to ensure an even extraction. After 5:30 to 6:00 have commenced, gently push the plunger until it has reached the coffee bed.
