Preeminence
Sudán Rumé is quietly rare. The plants are delicate, low-producing, vulnerable to pests, and demanding about where they'll grow. Even at Finca El Paraíso, this was their only lot in the past year.
And this particular harvest is stranger still. Juan at Finca El Paraíso told us that Lore received the only allocation sent to the United States. Another 12kg went to Switzerland. That's it.
“We haven't had another one like it,” he told us. Whether the farm can produce it again depends on the weather and on genetics that don't always behave predictably. Maybe another harvest comes. Maybe it doesn't.
And then you drink it: melon, lychee, piña colada. Delicate, strange, beautiful.

This is a precision-controlled washed coffee using only the coffee's native chemistry. No flavorings, fruits, or aromatic infusions are introduced.

Controlled Transformation
Pink Bourbon hardly needs help being beautiful. It is prized for bright fruit, florals, and an almost delicate sweetness of its own. At Finca El Paraíso, though, that is only the beginning.
This coffee undergoes two fermentations, including a pressurized fermentation with the farm's Paraíso Tropical yeast, followed by coffee-pulp extract and a thermal-shock wash. This isn't complexity for complexity's sake, the result is wonderfully simple: peach, white tea, flowers and rose botanicals.

The Familiar, Reconsidered
Castillo is not an exotic rarity. It is Colombian through and through, planted widely because it is practical, productive, and resilient. And that is precisely what makes this coffee interesting.
At Finca El Paraíso, familiar genetics meet high elevation, Cauca's climate, and the same obsessive attention given to the farm's rarest coffees. The result is not loud or strange, yet quite beautiful: raspberry, dark cherry, and orange blossom—bright fruit and florals lifted by clarity and sweetness, with a clean, elegant finish.
Sometimes the joy isn't discovering something rare. It's discovering how good something familiar can be.

The Story of a Revolution
In 2012, when Finca El Paraíso was born, it did not begin as an inherited tradition. They did not come from generations of coffee farmers. They were adopted by coffee farming, and perhaps because of that, They were never afraid to question it.

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
