Danche Station (Chelbesa)

The Danche Washing Station serves ~800 smallholder farmers from the Chelbesa kebele in Ethiopia’s Gedeb district. Managed by our partners at SNAP Specialty Coffee, Danche emphasizes meticulous sorting, controlled fermentation, and careful raised-bed drying. The region’s elevation and cool climate help deliver a cup that’s intensely floral with lively citrus and stone-fruit sweetness.

Kurume & Wolisho

Regional landraces prized in Gedeb and Yirgacheffe, Kurume (often smaller-bean, highly aromatic) and Wolisho (typically larger-bean, structured) combine for exceptional fragrance and a refined, tea-like profile—think oolong, blossoms, and ripe apricot with a clean, sweet finish.

Process

Fully Washed

  1. [Begin] Cherry floated in water to remove underripes/floaters.
  2. [Depulped] Fresh cherry is depulped at the station.
  3. [96 hr] Dry fermentation in parchment to loosen mucilage.
  4. [Washed] Thorough washing to fully remove mucilage.
  5. [12–14 days] Raised-bed drying; parchment turned frequently until stable moisture.

Conditioning time: Weather-dependent; stabilized prior to milling/export
