Las Perlitas
In Spanish, Las Perlitas means “Little Pearls.” Throughout the harvest in Colombia, many smallholder farmers produce exceptional coffees in quantities too small to export on their own. Rather than letting these coffees disappear into anonymity, Las Perlitas brings them together—curated by cup quality and profile, not volume.
This Huila selection is composed of washed coffees from producers across Santa Maria, Garzón, Pitalito, and Palestina, grown between 1,600 and 2,000 meters above sea level. While the exact makeup shifts each season, the profile consistently leans vibrant and fruit-forward, reflecting both the region and the growing prevalence of Pink Bourbon plantings in Huila.
Varieties
Most Las Perlitas Huila lots are heavily weighted toward Pink Bourbon, supported by Caturra and, in some seasons, small contributions of Gesha. This blend of varieties brings together brightness, sweetness, and aromatic complexity, while maintaining balance and approachability.
Process
Washed
- [Harvest] Ripe cherries selectively picked from contributing smallholder farms.
- [Depulped] Cherries depulped shortly after harvest.
- [Fermentation] Traditional wet fermentation to loosen mucilage.
- [Washed] Clean washing to remove remaining mucilage.
- [Drying] Dried on beds or patios until stable moisture is reached.

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
