An ethereal and precise Geisha from an award winning farm in Boquete
Damarli Estate — Colibrí Geisha
This coffee comes from Damarli Estate in Boquete, Panama, produced by David Pech. Sourced through direct relationship, this lot reflects both careful cultivation and a shared commitment to clarity, structure, and restraint in the cup.
Located on the slopes west of Volcán Barú and facing the Pacific Ocean, Damarli Estate benefits from volcanic sandy clay loam soils and a defined dry season—conditions that allow for controlled drying and consistent processing. Portions of the estate remain preserved as primary forest, contributing to both ecological balance and protection from seasonal winds.
The Geisha planted at Damarli originates from seeds selected from early Boquete plantings and is grown in carefully selected plots to maximize expression. Production remains limited, with each harvest offering only a small volume of this highly expressive coffee.
Geisha
Geisha is prized for its aromatic intensity and refined structure. When grown at elevation and handled with precision, it produces a cup defined by florals, citrus complexity, and a tea-like clarity—delicate in form, but highly expressive.
Process
Noble (Natural · Proprietary Fermentation)
- [Harvest] Ripe cherries selectively handpicked from high-elevation plots.
- [Sorted] Careful sorting to isolate optimal fruit.
- [Fermentation] Controlled anaerobic fermentation to develop aromatics.
- [Drying] Slow raised-bed drying under monitored conditions.
- [Stabilized] Conditioned and prepared to preserve structure and clarity.
Fermentation & conditioning time: Extended controlled fermentation + slow drying
The Cup
The cup opens with jasmine and bergamot, carrying a lifted floral structure. As it develops, orange blossom and lemongrass bring brightness and definition, while a soft marzipan sweetness rounds the finish. The body is silky and composed, with a lingering, tea-like clarity.
The Name
Named Colibrí, after the hummingbirds found throughout Damarli Estate, this coffee reflects a similar character as delicate, precise, and fleeting. Its expression is not forceful, but requires attention, revealing its full complexity gradually in the cup.

The Artwork
The artwork on this bag was designed by our in-house designer, Rachel. Inspired by Byzantine Christian motifs with a modern approach, it reflects the precision, delicacy, and layered nature of this offering.

What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
