An ornate and expressive Gesha from Cauca
Pillimue Gesha
This microlot comes from Jhon Jairo Pillimue in Cauca, Colombia--a lifelong coffee producer who has steadily refined his work through study, experimentation, and persistence. What began as a continuation of family tradition has developed into a focused pursuit of specialty coffee, shaped by both experience and intention.
Working alongside his family, Jhon Jairo has cultivated a system rooted in both discipline and care, passing on his knowledge to the next generation while continuing to improve his own practices. The result is a coffee that reflects both personal investment and a broader commitment to quality at origin.
Gesha
Gesha is known for its delicate structure and highly aromatic profile. When grown at elevation and carefully processed, it produces a cup that is floral, layered, and precise—valued for its clarity and expressive range.
Process
Washed
- [Harvest] Ripe cherries selectively handpicked.
- [Depulped] Processed shortly after harvest.
- [Fermentation] Traditional wet fermentation to remove mucilage.
- [Washed] Clean washing to refine clarity.
- [Drying] Dried on patios or beds until stable moisture is reached.
Fermentation & conditioning time: Varies by lot and conditions
The Cup
The cup opens with cola-like sweetness and lifted florals, with lilac and lemongrass bringing structure and brightness. As it cools, fig and soft fruit tones emerge, finishing with a light gooseberry acidity and a clean, lingering sweetness.

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
