Producer Highlight | El Diviso Farm

This microlot comes from El Diviso Farm, located in the highlands of Huila, one of Colombia’s most dynamic and diverse coffee producing regions. The farm sits within a broader landscape of smallholder producers, where steep terrain, varied microclimates, and rich volcanic soils create naturally complex growing conditions.

El Diviso is led by third-generation producer Nestor Lasso, who represents a shift in how many young producers in Huila are approaching coffee production. Rather than viewing the farm solely as agricultural output, El Diviso is managed as a full production system where agronomy, picking discipline, and post-harvest work are treated as interconnected parts of a single quality-focused chain.

The farm operates at approximately 1,850 meters above sea level, where cooler nighttime temperatures slow down cherry maturation. This slower ripening period allows for greater sugar development and structural complexity in the seed. Combined with careful selection at harvest, this creates the foundation for highly expressive micro-lots.

What has brought attention to El Diviso is not only its experimentation with fermentation, but the consistency and intention behind it. The farm works with small, tightly controlled batches where separation by ripeness, variety, and picking window is central to the process.

There is also a broader context to El Diviso’s work within Huila. The region has become a hub for quality-focused producers who are increasingly collaborating, sharing processing knowledge, and refining techniques that move Colombian coffee beyond traditional expectations.

At its core, the farm’s identity is built around revealing what already exists in the coffee rather than imposing a singular profile. Each decision, from harvest timing to fermentation structure, is aimed at expressing the underlying character of the land, variety, and altitude in as clear a form as possible.

Java Varietal

Java is a historically significant varietal with Ethiopian lineage, known for its floral aromatics, refined acidity, and elegant structure.

It is a variety that performs best under careful cultivation and precise processing. When left untouched, it tends to express soft florality and tea-like structure. When handled with care, especially through controlled fermentation, it can develop heightened aromatic intensity while maintaining clarity.

At El Diviso, Java responds particularly well to this approach. Its natural floral character becomes more pronounced through anaerobic fermentation, while thermal shock techniques help preserve brightness and definition. The result is a varietal that feels expressive but still structured, with layered aromatics rather than overwhelming intensity.

The Rhodion

Tasting Notes

Jasmine · Rose Water · Forest Berry · Cider

The Rhodion is a limited microlot from El Diviso Farm in Huila, Colombia, selected for the Vault Series to highlight expressive, process-driven coffees from standout producers.

Named from the Greek meaning “little rose,” The Rhodion reflects the floral intensity that defines this Java lot, as well as the precision behind its production.

Processed using anaerobic fermentation and thermal shock techniques, this coffee is designed to emphasize aromatics while maintaining structure and clarity.

The result is a cup that opens with jasmine and rose water, followed by layered forest fruit sweetness and a crisp, cider-like finish. It is a coffee defined by elegance, transparency, and controlled complexity.

What draws me back to this coffee is its balance of florality and structure. The rose water aromatics are beautiful, and the cider notes add a bright, playful complexity. It has become a favorite of mine, you dont want to miss this gem!” — Rachel
