Finca Santa Maria

There are two things that make Finca Santa Maria so special:

Firstly, the coffee grown there is absolutely exquisite. The best roasters around the world seek out this farm for its renowned commitment to excellent tasting, highly sought after coffee varieties.

Secondly, Finca Santa Maria is committed to organic farming practices. Unlike many certified organic farms, Finca Santa Maria does not spray their crops with either synthetic or organic pesticides or herbicides. Finca Santa Maria is completely NO SPRAY. 

 

Gesha

The Gesha varietal is the original coffee plant, originating in Ethiopia. Every single Arabica coffee available today finds its origin in this coffee. Fortunately for us, the Gesha plant has been preserved and cultivated for more than a thousand years and is now grown all over the coffee growing regions of the world. This one from Colombia is truly remarkable. Staying true to the well-known characteristics found in this special coffee, our Finca Santa Maria has a tea like body, juicy acidity and floral aroma. What truly shines through is a distinct pineapple flavor, with further notes of orange blossom and honey. We were absolutely wowed when cupping this coffee for the first time and knew we had to share it with you.

 

Process

This lot of Gesha coffee underwent a mixed-fermentation Honey process. Cherries are harvested with a sugar content measuring greater than 20 degrees Brix. Cherries are then sorted and washed before being sealed into GrainPro bags to be fermented anaerobically for 24 hours. Coffee is then pulped and the pulped coffee is dry fermented aerobically for 36 hours. The fermented, pulped coffee is then dehydrated for 20 hours before being moved to the marquee to be dried for 20 days.

Region

Santander is unique among Colombia’s coffee growing regions, with a varied topography of mountains, rivers, canyons, and valleys. Located to the east of Antioquia and the north of Boyaca, Cundinamarca, and Bogota in Central Colombia, the department of Santander was established in 1857 and today contains a variety of agricultural industries.

Santander’s Andes mountains are where some of the first coffee farms in Colombia were established, and the Department’s agricultural history is intertwined with the history of coffee. Fresh water sources and rich soil continue to make the region suited for coffee farming today, with shade trees and forests incorporated on most farms.

 

The Artwork

The artwork on this bag was designed by our in-house designer, Rachel. The design was inspired by Byzantine Christian artwork with a modern approach--subtly Byzantine in the best way. This approach is well-paired with the ancient Gesha varietal which harkens back to the old worlds. The artwork in placed upon an 8oz bag from a small company in the Netherlands. Once the sticker is removed, this bag can be recycled.
