Another spectacular coffee from the famed Nestor Lasso
El Diviso
Nestor is a third-generation coffee farmer, whose grandfather, José Uribe, was the founder of the farm El Diviso. With the work of all his family and constant savings he was able to build the infrastructure to process differentiated coffees; searching for better quality. After a long trial and error period he managed to standardize different processes, getting a better income in order to plant new varieties that allowed him to have better quality. One of his dreams is to produce specialty coffee that reaches all the world.
Sidra Bourbon
Sidra is a hybrid varietal, combining the distinguished characteristics of Typica and Bourbon—two of the most respected and historically significant coffees in the world. It inherits the finest qualities of both, producing a cup that is remarkably complex and refined.
Process
Fully Washed (Anaerobic Thermal Shock)
- [Begin] Floating process to select only fully ripe cherries.
- [18 hr] Oxidation in cherry at 22–25°C.
- [40 hr] Anaerobic fermentation in cans at 16–18°C.
- [10 hr] Open-air fermentation in tanks; leachates collected.
- [pulped] Coffee is pulped (immediate).
- [3 hr] Oxidation in mucilage.
- [24 hr] Submerged fermentation at 32°C using water + leachates; stirred occasionally.
- [shock] Thermal shock wash with 65–70°C water (immediate).
- [144–264 hr] Parabolic drying to 11% moisture at max 38°C (6–11 days).
Total process time: 239–359 hours (≈10 to 15 days)
The Artwork
The artwork on this bag was designed by our in-house designer, Rachel. The design was inspired by Byzantine Christian artwork with a modern approach--subtly Byzantine in the best way. This approach is well-paired with the elaborate and beautifully complex flavors of this coffee. The artwork is placed upon an 8oz bag from a small company in the Netherlands. Once the sticker is removed, this bag can be recycled.

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
