Santa Isabel / San Lorenzo

Luis “Wicho” Valdés III is a third-generation producer crafting some of Guatemala’s most sought‑after coffees from Santa Isabel and San Lorenzo in the rolling, cloud‑forested hills of Cobán. The region’s high humidity and near‑constant rainfall shape both cultivation and processing, with adaptable drying methods and careful milling at Santa Isabel’s family‑run beneficio to ensure clarity and sweetness in the cup.

Caturra

A classic Bourbon‑line cultivar, Caturra is known for its balance, sweetness, and vibrant fruit when grown at elevation. In Cobán’s cool, humid climate, it delivers a lively, clean profile with tropical fruit and bright, juicy structure.

Process

Fully Washed

  1. [Harvest] Selectively picked ripe cherries from high‑elevation plots.
  2. [Depulped] Immediate depulping at the on‑site mill.
  3. [Fermentation] Controlled wet fermentation; washed to remove mucilage.
  4. [Drying] Adaptive drying methods tailored to Cobán’s humid, rainy climate.
  5. [Milled] Final conditioning and prep for export at Santa Isabel’s mill (est. 1985).

Conditioning time: Noted at mill; varies by weather
