"We are the third generation to grow coffee at El Diviso. Our grandfather, José Uribe, founded the farm, and through the hard work of our family and consistent savings, we were able to build the infrastructure to process differentiated coffees—always searching for better quality, both in the cup and in our lives. After a long period of trial and error, we managed to standardize our processes, improve income, and plant new varieties that elevate quality year after year."

Caturro Chiroso
Caturro Chiroso is a rare mutation believed to descend from Caturro varietal mixed with older Ethiopian Typica-line genetics. It’s celebrated for its bright, candy-like sweetness, lifted florals, and tropical fruit character. In Huila, this variety consistently produces some of the region’s most aromatic and clean cup profiles.
Process
Anaerobic Semi-Washed
- [Begin] Floating process to select only fully ripe cherries.
- [80 hr] Anaerobic fermentation (whole cherry) in cans at 16–18°C.
- [25 hr] Oxidation in large tank.
- [pulped] Coffee is pulped (immediate).
- [12 hr] Mucilage oxidation.
- [36 hr] Submerged fermentation at 40°C; stirred occasionally for homogeneity. (~50% mucilage removed at this stage.)
- [432–576 hr] Parabolic drying for 18–24 days to 11% moisture, never exceeding 30°C.
Total process time: 605–733 hours (≈25 to 30 days)

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
