A vibrant Pink Bourbon from the renowned Finca El Paraíso
El Paraiso
Finca El Paraíso has become a benchmark for precision processing in Colombia. This lot showcases their controlled use of custom yeast (“Paraíso Tropical”), double fermentation, and a thermal‑shock wash to lock in clarity and fruit intensity. Drying is done in a dehumidifier to preserve delicate aromatics and prevent over‑oxidation, followed by careful stabilization prior to export.
Pink Bourbon
Pink Bourbon is a Bourbon‑line variety believed to originate from a Typica mutation, with Bourbon later giving rise to cultivars like Caturra—and more recently, Pink Bourbon. It’s prized for its high potential to develop unique, exotic profiles with bright fruit, florals, and refined sweetness.
Process
Anaerobic Double Fermentation Washed (Thermal Shock)
- [Harvest] Cherries picked at peak ripeness with high mucilage sugars.
- [48 hr] Whole‑cherry anaerobic fermentation.
- [depulped] Coffee is depulped (immediate).
- [36 hr] Pressurized fermentation with “Paraíso Tropical” yeast in special tanks.
- [18 hr] Addition of liquid coffee‑pulp extract to the pressurized tanks to intensify fruit character.
- [shock] Thermal‑shock wash (~70 °C) to halt microbial activity and fix precursors.
- [drying] Dehumidifier drying to target moisture; prevents over‑oxidation and off‑fermentation.
- [stabilize] Resting/stabilization in a cool environment; electronic selection and hulling to spec.
Fermentation & conditioning time: 102 hours (+ drying & stabilization)
The Artwork
The artwork on this bag was designed by our in-house designer, Rachel. Inspired by Byzantine Christian motifs with a modern approach, it mirrors the layered and intricate flavor profile of this coffee. The design is applied to an 8oz bag sourced from a small company in the Netherlands. Once the sticker is removed, the bag can be recycled.
