Danche Station (Chelbesa)
The Danche Washing Station serves ~800 smallholder farmers from the Chelbesa kebele in Ethiopia’s Gedeb district. Managed by our partners at SNAP Specialty Coffee, Danche emphasizes meticulous sorting, controlled fermentation, and careful raised-bed drying. The region’s elevation and cool climate help deliver a cup that’s intensely floral with lively citrus and stone-fruit sweetness.
Kurume & Wolisho
Regional landraces prized in Gedeb and Yirgacheffe, Kurume (often smaller-bean, highly aromatic) and Wolisho (typically larger-bean, structured) combine for exceptional fragrance and a refined, tea-like profile—think oolong, blossoms, and ripe apricot with a clean, sweet finish.
Process
Fully Washed
- [Begin] Cherry floated in water to remove underripes/floaters.
- [Depulped] Fresh cherry is depulped at the station.
- [96 hr] Dry fermentation in parchment to loosen mucilage.
- [Washed] Thorough washing to fully remove mucilage.
- [12–14 days] Raised-bed drying; parchment turned frequently until stable moisture.
Conditioning time: Weather-dependent; stabilized prior to milling/export

FAQs
What is your roasting and production schedule?
We roast to order every Wednesday, processing all orders placed before 9:00 AM PST that day. Once roasted, orders are packed and shipped by the end of Thursday.
Retail orders placed after the Wednesday morning cutoff are usually roasted the following week. However, we often roast extra to cushion in your regular orders, so if your coffee is available, it may still ship in the week!
Grinding Schedule: All ground coffee is ground to order just before shipping, so you can be assured your coffee has arrived as fresh as possible.
